Healthy Chinese Food Recipe: Sweet and Sour Chicken with Brown Rice

Ingredients:

2 cups brown instant rice
¼ cup flavored rice vinegar
2 tablespoons low sodium sodium soy sauce
2 tablespoons of corn starch
2 tablespoons apricot canned food
2 tablespoons of rapeseed oil, divided
1 pound chopped chicken tenders
4 garlic cloves, minced
2 teaspoons finely grated or chopped ginger
1 cup low sodium chicken stock
6 cups slice-sized vegetables like peas, broccoli and bell peppers
1 (5 ounces) can be chopped chestnuts with water, drained

Directions:

  1. Cook rice as directed on the package. Meanwhile, whisk vinegar, soy sauce, corn starch and canned apricot in a small bowl. Set aside. Heat 1 tablespoon of oil in a large frying pan over medium heat. Add chicken and cook for 2 minutes. Continue cooking, stirring from time to time, until the pinks on the outside cease and begin to brown in spots, for about another 2 minutes. Transfer to a plate.
  2. Add the remaining 1 tablespoon of oil, garlic and ginger to the pan and cook, stirring, until fragrant, 20-30 seconds. Add the broth and bring to a boil, stirring constantly. Add vegetables, simmer, cover and cook until vegetables are crispy, 4 to 6 minutes. Stir the chestnuts and chicken in the water. Beat the reserved sauce and add to the pan. Cook over low heat, stirring constantly, until the sauce thickens and the chicken warms up, about 1 minute. Serve with rice.
